It's all about the back of the hat. People who aren't actually knowledgeable in different styles of baseball caps often call fitted hats and snapbacks "fitted hats". Although the two styles of baseball caps are very similar its the back of the hat that separates them.  I won't bore you with a long unnecessary definition, instead I'll get straight to the point. Below explains the difference between fitted hats and snapbacks.

Quick Answer: Look at the back of a fitted hat. You'll notice there are no open space in the back contrary to snapbacks.

Fitted hats came out before snapbacks. The whole idea behind fitted hats were a set of  pre-measured/pre-sized  hat that fit different individuals. There are approximately 12 different sizes of fitted hats to fit 12 different head shapes.

Quick Answer: Look at the back of a snapback. Notice that the back of the hat has an open space with two plastic strips that attach to each other unlike fitted hats.

Snapbacks was supposed to be an upgrade from fitted hats. The two strips of plastic on the back make snapback hats adjustable to any head size unlike fitted hats where the hats are measured for a specific sized head. This mechanism made snapback hats more popular than fitted hats on stores because they owner didn't need to stock several different sized hat for one design. It also became popular for cap wearers because they did not need to measure their heads.

Quick Answer: Look at the back of the hat. It has an opening like a snapback but instead of two plastic strips that connects together , the strapbacks has two straps that interlock sort of like a belt.

The two strips of snapbacks, snap together when pushed down. The two straps on a strapback, straps together like a belt. Its commonly called "Dad Hats" (a name popularly given to strapbacks because dads often wear these style of hats, until recent when it became a trend and more younger people started rocking it as well).
